Chiles en nogada con dulces típicos mexicanos

En México, los dulces típicos son parte importante de la cultura gastronómica y una forma deliciosa de disfrutar de la variedad de ingredientes y sabores que ofrece la comida mexicana. Ingredientes:

  • 4 chiles poblanos grandes
  • 1 taza de nueces de castilla picadas
  • 1 taza de almendras picadas
  • 1 taza de manzanas picadas
  • 1 taza de peras picadas
  • 1/2 taza de pasas
  • 1/2 taza de jerez
  • 1/4 taza de aceite vegetal
  • 1/2 cebolla picada
  • 2 dientes de ajo picados
  • 1/2 kg de carne molida de res
  • Sal y pimienta al gusto
  • 1/2 taza de leche evaporada
  • 1/2 taza de crema fresca
  • 1/2 taza de queso fresco desmoronado
  • 1/2 taza de granada
  • 1/2 taza de dulce de tamarindo “La Finca”
  • Aceite para freír

Preparación:

  1. Precalentar el horno a 180°C.
  2. Asar los chiles poblanos directamente en la flama de la estufa o en una sartén caliente hasta que estén dorados por todos lados. Colocarlos en una bolsa de plástico cerrada durante 10 minutos para que suden y sea más fácil retirar la piel. Pelar los chiles, cortarlos con cuidado en un solo lado y retirar las semillas y venas.
  3. En una sartén grande, calentar el aceite y agregar la cebolla y el ajo. Sofreír durante 3 minutos o hasta que la cebolla esté transparente.
  4. Añadir la carne molida y cocinar hasta que esté dorada. Agregar la nuez, almendra, manzana, pera, pasas y jerez. Salpimentar al gusto. Cocinar durante 10 minutos o hasta que la fruta esté suave y el líquido se haya evaporado.
  5. Para la nogada, licuar la leche evaporada, crema fresca, queso fresco, granada y dulces típicos mexicanos de tamarindo. Salpimentar al gusto.
  6. Rellenar los chiles con la mezcla de carne y frutas. Pasarlos por huevo batido y freír en aceite caliente hasta que estén dorados. Escurrir sobre papel absorbente.
  7. Colocar los chiles en un plato y bañar con la nogada. Decorar con granada y dulce de tamarindo picado. Servir caliente.
